It is late summer, the tomatoes are plump, the figs are ripe and the chilies are sweet.

The key to the gravy are the dates, tamarind, mustard and oil. Oil makes the meals filling and satisfying. Then simply paint new flavours: instead of water, use red wine or apple cider. Beer would also go well, as would clear fragrant Asian flavours.
